Is Summer really over?

Apparently summer is coming to an end. Labor day has come and gone, the weather is heating up and I can still find peaches and tomatoes at the farmers market. Yep, pretty much sounds like summer is over. :)

This past Wednesday I finally made a trip back to the farmers market. Yipee!! I've been frequenting Trader Joe's and Whole Foods and almost forgot about the marvelous Farmers Market. I got myself some beautiful mixed greens, some fresh herbs, peaches, heirloom tomatoes and eggs. It was nice to be back. Now, what to do with all the beautiful fresh produce?

I made a simple yet delicious salad with the peaches, tomatoes and basil.

PTB Salad
(peach, tomato, and basil)

1 Peach
1 Heirloom tomato
3-5 small basil leaves shredded
drizzle of olive oil
salt and pepper to taste

Chop all your ingredients, put them in a bowl, drizzle with olive oil and let sit a few minutes before serving.

I can't think of a salad that represents summer more! Can you?

  1. Oh, this reminds of a very similar recipe that I make:

    Quartered stone fruit, like apricots, peaches, nectarines, plums...

    Drizzle with reduce balsamic vinegar, chiffonade basil, and sprinkle with smoked sea salt.

    Serve on a bed of baby mixed greens.
